About Us
Gayle's Greek Gourmet produces delicious Greek cuisine for retail sale in the Cowichan Valley. Spanakopita, dolmathes, tzatziki, moussaka, pastitsio, the best Greek baklava you'll ever have, and more. Food is produced in the wonderful commercial kitchen at the beautiful and iconic Providence Farm.
All food is prepared with love and care for the best possible results by Gayle, a dedicated foodie with a discerning palate. Born into a family of food merchants and restaurant owners, Gayle's culinary education was at her Papou's elbow in the family kitchen. There, she learned to prepare a feast for 100 as easily as for 10...the usual number for family dinner.
The recipes are simple with not many variations, it is the quality of the ingredients that makes the success of a Greek dinner. It is essential that they are carefully chosen.

Practices
Produce comes fresh from our own small farm, the Garden of Eatin's, or is otherwise locally grown as much as possible. Gayle's Greek Gourmet uses only top-quality Greek olive oil from Crete, cow/goat, or sheep feta for our Spanakopita, and that difference shows when you taste it.
The best Baklava you'll ever have is made with organic butter and only with butter, there is no cheap oil for filler. Our baklava uses honey only with no sugar syrup, the walnuts are freshly chopped halves so that they have the best flavour and are large enough that the walnut flavour shines.
While we can't make every dish available at all times, we will prepare as many classic Greek dishes and confections as possible as often as possible. Moussaka, pastitsio, plaki, garithes uvetsi, fassolia and fasolakia, melitzana, tarama, hitipli...
